Meg Whitbeck MS RDN is co-founder of Nu, LLC. Meg holds her Bachelor of Science in Biology, Masters in Food and Nutrition and is a licensed Registered Dietitian.
Meg's career as a dietitian began in 2009 when she worked at Tufts Medical Center in Boston, MA working in outpatient oncology. She moved into a role working in several CT public school districts for Chartwells K12, providing nutrition education and supporting quality school meals to K-12 students.
Meg was invited to join Framingham State University as a professor in the Food and Nutrition Department and Coordinated Program in Dietetics. She taught undergraduate and graduate courses in school nutrition education and community nutrition, winning the Quality Matters certification for exceptional curriculum design and implementation for her hybrid courses.
Meg's next career move was to join RVNA, now RVNAhealth, as their flagship dietitian in the new Center for Exceptional Care in Ridgefield, CT. Meg built nutrition programs and the outpatient nutrition practice from the ground up, forming close relationships with many healthcare practitioners and organizations in Fairfield County.
Meg is excited to partner with her colleague, Ava Safir JD MS RDN, to form Nu, LLC. Meg will offer outpatient nutrition counseling, group nutrition counseling, public speaking engagements, corporate nutrition programs and other community-based nutrition programs. Meg is married with two children and lives in Ridgefield, CT.
Ava Safir, JD, MS, RDN is a Registered Dietitian specializing in nutrition counseling and education. Ava began her professional career as an attorney in New York City.
After moving to Connecticut in 2001, she worked as a certified personal trainer and certified Pilates instructor with a focus on teen athletes and seniors. Ava deepened her passion for nutrition after experiencing firsthand how nutrition therapy and lifestyle changes significantly improved her health and well-being.
After earning her master’s degree in Nutrition Education at Columbia University-Teacher’s College, she worked as a clinical dietitian at Stamford Hospital, Center for Discovery and most recently, as a Registered Dietitian and Nutrition Educator at RVNAHealth.
As co-founder of Nu, LLC, Ava enjoys working with adolescents and adults on a range of issues, with special focus on gastrointestinal disorders, diabetes, heart disease, anti-inflammatory protocols, weight gain/loss, and intuitive eating.
During her free time, Ava can often be found hiking, at the gym, spending time with her family, reading, and participating in continuing education programs focused on the latest research in nutrition and dietetics.
